This vegetable is simply perfect however you like it.
Whether you prefer it slathered with butter and straight from the cob, or you'd rather have it as the base for your bread, corn is a truly incredible delight. Southerners love their corn another way, as in grits: especially when it is the conclusion of a recipe that begins, "Shrimp and . . ." Corn comes in a vast array of colors, from white to yellow to red and beyond, and it makes its way into puddings and onto the grill. Since there are so many ways to enjoy corn, we will just share a few of our favorites.
If you like the idea of corn cakes, you can't go wrong with some Lady Pea-and-Corn Patties. These are packed with the zesty flavors of lime and cilantro.
