Calling itself “The Capital of Barbecue” is a bold statement (to say nothing of the faux capitol-dome that sits atop the place!), but we think the whole hog here, finely chopped and with a generous amount of crispy bits of skin thrown into the mix, served with thin cornbread, is tops.
