The dimly lit Paynes may give the impression of being three decades past its prime, but the barbecue is right up there with A&R for our current favorite pork sandwich. Chopped pork with crispy barky bits is topped with a drippy scoop of mustardy coleslaw on top. It’s extravagantly messy—and scrumptious.
