Not only is it surrounded by agriculture, but it was the hometown of Thomas Jefferson, the forefather of fine food. Known for procuring great ingredients (many of which he grew himself ), Jefferson laid the foundation for what is happening today. “His influence is really felt,” says Dean. Jefferson would be proud of his legacy. “It’s all about local ingredients,” confirms Harrison Keevil, chef at Brookville Restaurant, where more than 85% of the menu is sourced within 100 miles.
