We've long loved burgoo, Kentucky's answer to Brunswick stew and hash, as well as the mutton at Owensboro's Moonlite Bar-B-Q Inn and Shady Rest Barbecue, both favorites of Eleanor Griffin, native Kentuckian and our Editorial Director of Magazine Development.

Copy Assistant Leah Dueffer steered us toward Starnes Barbecue in Paducah, her mom's hometown. We also enjoyed sandwiches made in Mayfield at Hill's Bar-B-Que and Carr's Barn. Mayfield cooks squish the pork, sauce, and bread together like a grilled cheese sandwich.
