Scott's Wine Suggestion:
This recipe is an Italian food lover's dream. Look for reds with soft tannins (that wonderful astringent compound found in red wine giving you a mouthfeel similar to sipping a glass of unsweetened tea) and very little oak. You'll also want the wine to have plenty of fruit flavor on the palate to complement the sweetness of the sauce. Bottom line, you want a wine that's fairly straightforward and rustic, just like this recipe.

  • Gallo of Sonoma, Pinot Noir, California (they also make an exceptional Sangiovese)
  • Caparzo, Sangiovese, Tuscany, Italy
  • Barone Ricasoli, Formulae Toscana, Tuscany, Italy
  • Renwood, Barbera, California Sierra Series
