Scott's Wine Suggestion:
This rich Boston butt roast just oozes with holiday flavors such as garlic, orange, sage, rosemary, and parsley. Slow roasting only intensifies these flavors and creates a roast that's incredibly tender. Save your big, robust reds for another occasion; this recipe calls for wines such as American-made Pinto Noir and Zinfandel, a French Beaujolais from Fleuri or Moulin-^-Vent, or an Italian Chianti. All of these wines will be fruit-forward with enough acidity to cut through the richness of the meal.
