Pairing wine with assertive Southwest ingredients such as chili powder and jalape-os peppers is no big deal. For this bold, flavor-packed Flank Steak and accompanying Salsa, look for softer, smoother red wines with a good dose of fruit flavor (even a little bit of sweetness will be a good thing with these recipe). Likewise, you'll also want to avoid oaky reds and those high in tannins (remember tannins magnify heat). Think about grapes such as Merlot and Zinfandel. If you're looking for something off the beaten path, try a California-produced Syrah.
