Scott's Wine Suggestion:
Pairing wine with Mexican food is not as tricky as you might think. Although seasonings such as chili powder and cumin scream for ice cold beer, these wonderful Beef and Chicken Fajitas cozy up to wine just fine. But here's the key: you'll want to look for softer, smoother white and reds with a good dose of fruit flavor and even a little bit of sweetness will be a good thing with this recipe. Likewise, you'll also want to avoid red wines high in tannins because tannins magnify heat. This is the perfect time to call on the red grape Merlot and the white grape Viognier. Both are classic French grapes from Bordeaux and the Rhöne Valley, respectively.
