Recipe: * Chicken With Artichokes This may sound like a dainty dish, but it's not. The buttery sauce with a reduction of Sherry and chicken broth and a hint of rosemary is just the ticket for a glass of medium- to full-bodied white wine. Although the sauce calls for Sherry, I recommend cooking with the wine you plan to drink-a term called "bridging". If you do decide to use Sherry, please use the real thing. Avoid, at all costs, anything labeled "cooking sherry," which is low-quality wine that is further adulterated with salt. If you wouldn't drink it, don't cook with it.
