This ambitious and very delicious recipe offers a multitude of flavors--a creamy sauce with a kick, not to mention a delicious chicken cake filled with an assortment of vegetables and a little Creole love. A medium- to full-bodied white wine is just what the doctor ordered. Use the bold and distinctive style of these U.S.--and Australian--produced Chardonnays, which are loaded with fruit flavors of pears, apples, and citrus. They're also produced in a bigger style, while still maintaining good acidity, giving them plenty of muscle when it comes to richer elements of the recipe.
