There are a number of things to consider when searching for just the right wine to pair with this recipe. You have the sweetness and slight spiciness of the sausage, plus the creamy texture of the Parmesan cheese-flavored grits . You'll need a white wine that complements the flavors of the sausage and peppers, but that also contrasts the cheesy grits with palate cleansing qualities, too. There's no shortage of great white wines, but you might want to give this selection a shot. The Vinho Verde from Portugal is particularly fun because of its great value and spritzy quality.
