In keeping with the Polynesian theme, this fabulous recipe is loaded with flavor--soy sauce, ginger, garlic, and an invigorating mango salsa. You'll want a wine that's bold enough to handle the dish's equally bold flavors but not so big that it magnifies the spicyness of the salsa.
