Whether you'd like to admit it or not, there's a certain guilty pleasure in a good ol' fish "plank" from Captain D's or Long John Silver's. This recipe takes that same concept and adds a wonderful Southern twist--catfish. The slightly sweet batter--deep-fried to a beautiful golden-brown--immediately puffs to envelope and protect the flaky catfish. Although the Brits will have you think a pale ale is in order, a medium- to full-bodied white with plenty of acidity and a touch of sweetness is a match made in culinary heaven.
