Outdoor entertaining is in full swing and this recipe certainly reflects the mood. Flank steak is great for the summer--it has all the robust flavor you expect from steak, yet it's relatively lean (and it takes on the flavor of a marinade in no time). This recipe gets a zesty boost from lemon and a touch of heat from crushed red pepper. Look for a smooth red with lots of fruit and low to mild tannins. Don't be afraid to stick these in the refrigerator about 15 minutes before you're ready to pour.
