* Recipe: Country-Style Spaghetti
January 02: page 112

Scott's Wine Suggestion:
Plain and simple, this is spaghetti at its best--thick, rich tomato sauce with plenty of oregano and basil, atop meatballs and pasta. Look for reds with soft tannins and very little oak. Tannins are those wonderful astringent compounds found in red wine. They give you a mouthfeel similar to that of sipping a glass of unsweetened tea. You'll also want the wine to have plenty of fruit flavor on the palate to complement the sweetness of the sauce. Bottom line, you want a wine that's fairly straightforward and rustic, just like the Country-Style Spaghetti.
