Scott's Wine Suggestion:
This ambitious and very delicious recipe offers a multitude of flavors--buttery sauce, tomato purée, jalapeño peppers, not to mention redfish, crab meat and shrimp. A medium- to full-bodied white wine is just what the doctor ordered. Use the bold and distinctive style of these U.S.- and Australian-produced Chardonnays, which are loaded with fruit flavors of pears, apples, and citrus. They're also produced in a bigger style, while still maintaining good acidity, giving them plenty of muscle when it comes to the richer elements of the recipe.
