You might not traditionally think of pairing wine with a side dish; however, this holiday season give the other full-flavored dishes at the table just as much consideration as you give to meat and poultry. There are a number of things to consider when searching for just the right wine to pair with the Caramelized Onion-and-Gorgonzola Mashed Potatoes--the sweetness of the onions and the boldness of the cheese. A Chardonnay with medium- to full-body and good acidity is just the ticket. Conundrum, produced by Caymus, is perfect for those who enjoy a sweeter wine. It's a blend of several grapes--Chardonnay, Sauvignon Blanc, Viognier, Sémillon, and Muscat--the latter two providing a delicate touch of sweetness. There's no shortage of great Chardonnays on the market, but you might want to give this selection a shot.
