Here's a chance to have a lot of fun with a food and wine
pairing. Although small, these delicious roasted quail pack a
flavorful punch. Like other game birds, quail can handle the
characteristics and profile of a medium-bodied red wine such as
Pinot Noir, and certain styles of Merlot and Malbec (a classic
Bordeaux blending grape that's widely planted in Chile). Select a
wine with soft tannins, and a healthy dose of spice aromas and fruit
(think black cherries). Offer one of these tasty selections at your
holiday table.
