Scott's Wine Suggestion:
Pairing wine with Mexican food is not as tricky as you might think. For these wonderful pork tacos and accompanying salsa, you'll want to look for softer, smoother wines with a good dose of fruit flavor (even a little bit of sweetness will be a good thing with these recipes) and a low level of oak. Likewise, you'll also want to avoid red wines high in tannins (remember tannins magnify heat). This is the perfect time to call on the red grape Merlot and the white grape Viognier.
