Recipe: Warm Goat Cheese Salad

You might think that wine with salad is a no-no, but let me
assure you this recipe is perfect for Sauvignon Blanc. Although the
style of Sauvignon Blanc can vary from winemaker to winemaker, most
are relatively light in body with fairly high acidity--perfect for
the warm August climate. In addition, the bright acidity of
Sauvignon Blanc pairs wonderfully with the acidity of the fresh goat
cheese--placing the two acidic flavors head-to-head actually tones
down the overall acidity of the salad. There's no shortage of
great-tasting, economical Sauvignon Blanc on the market--the best
coming from the Sancerre (sahn-SEHR) and Pouilly-Fumé (poo-yee
few-MAY) regions of France's Loire Valley, New Zealand, and
California. In California, Sauvignon Blanc is often referred to as
Fumé Blanc.
