Recipe: Balsamic Pork Chops
June 2001: page 168

Scott's Wine Suggestion:
On their own, pork chops are fairly mild. However, the balsamic sauce--(seasoned with lemon and herbs) that tops these sautéed chops--turns this recipe into something special. Here's an opportunity to use a medium-bodied wine such as a South African Pinotage or the classic Spanish grape Tempranillo, now being successfully grown in America (and a great off-the-beaten-path value to boot).
  • Clos Du Bois, Alexander Valley Reserve, Tempranillo
  • Cheetah Valley, Pinotage
