Although on their own, turkey cutlets are fairly mild, the addition of Dijon mustard and a pan-fried breading turns this recipe into something quite tasty. This is an opportunity to try a "crossover" wine, meaning a medium- to full-bodied white or a light-bodied red that works with both red or white meat.
