Rack of Lamb With Mint Aïoli--Lamb chops, especially when roasted or grilled, can handle more full-bodied wines such as French Bordeaux, which are largely comprised of the grapes Merlot and Cabernet Sauvignon. However, when venturing into your local wine store, keep in mind that French wines are labeled by place name, which, for beginners, can seem a bit daunting. For this particular recipe, you'll probably want to stick with wines from the Saint-Julien region of Bordeaux. On the other hand, wines from America and Australia, for example, are labeled according to grape type (also referred to as varietal), meaning the words "Merlot" or "Cabernet Sauvignon" will actually appear on the label. Try Penfolds, Koonunga Hill, Cabernet Sauvignon/Shiraz, Australia; Joseph Phelps, Cabernet Sauvignon, California; Honig, Cabernet Sauvignon, California; or Foffani, Friuli, Merlot, Italy.
