Scott's Wine Suggestion:
For these bold tenderloins you can either go with a red or white. If you decide on red, look those with soft tannins (i.e. Merlot, Barbera, rosé). If you go with a white, stay away from those with a lot of oak. Both tannins and oak accentuate the spice and heat of a dish.
