  • Chill soups for at least two hours before serving for the best flavor.
  • Puree the mixture until it's partially smooth, or garnish with diced vegetables to add a bit of crunch if you prefer more texture.
  • Serve cold soups in well-chilled bowls to keep them cold longer. Or, add a touch of freshness by serving soup in edible containers such as a hollowed-out tomato, bell pepper, or squash.
  • Easy, last-minute garnishes include finely chopped chives or green onion, a dollop of sour cream sprinkled with paprika, and minced fresh herbs such as parsley or basil.
