What is Stone Fruit?
A stone fruit has a hard pit in the middle, surrounding a seed. Almonds, olives, mangoes, and even dates are all considered stone fruits (known as “drupes” in technical terms), but plums, peaches, nectarines, cherries, and apricots are the most well known.

A Spoonful of Sugar
You may need to adjust the amount of sugar depending on the ripeness of your fruit. Taste the filling before baking, and increase the sugar as desired.
