Herbed Chicken Meatloaf
Tomato-Basil Meatloaf
Tex-Mex Meatloaf

It’s always time for comfort food, and meatloaf is an ideal choice when you want to serve a feel-good supper. We’ve come up with some fresh, updated flavor profiles. All are soul-soothing, fairly simple to make, and anything but boring.

You can freeze slices of Herbed Chicken Meatloaf (pictured) in a heavy-duty zip-top freezer bag for up to three months. Thaw the frozen slices overnight in the refrigerator, and heat them in a microwave-safe container 1 1/2 minutes on HIGH or until sizzling.

"Jazzed-Up Meatloaf" is from the May 2008 issue of Southern Living.
