Rich and creamy Turkey Tetrazzini uses mushroom soup and a jar of Alfredo sauce to jump-start the recipe. Crushed seasoned croutons form a flavorful topping.

Pasta Casserole Recipes:
1. Cheesy Sausage-and-Tomato Manicotti
2. Turkey Tetrazzini

Casseroles are invaluable during the holidays because of their make-ahead ease, and these mouth-watering dishes deliver just that. All of the recipes can be made the night before, if desired. Allow the casseroles to stand at room temperature for 30 minutes before baking. Or you can follow our easy freezing instructions for advance preparation up to a month.

If you enjoy the traditional flavors of lasagna, be sure to try Cheesy Sausage-and-Tomato Manicotti. Laura Martin of our Test Kitchens discovered an easy way to fill the manicotti shells. Simply slice each noodle lengthwise, fill, and fold the noodle back together. Then place the cut side down in the casserole dish. Stuffing pasta shells has never been easier.

"What's for Supper? Make-Ahead Pasta Casseroles" is from the November 2003 issue of Southern Living.
