  Use a wide-blade vegetable peeler to shave the Parmesan cheese that garnishes Fresh Tomato Sauce With Linguine.

Don't leave those end-of-season tomatoes hanging; use their ripe perfection to enhance these flavorful dishes. Their sweet-acidic taste, combined with other ingredients, is hard to beat. We sampled a variety of these juicy gems, from whole red tomatoes to small cherry ones, in our Test Kitchens. Toss them with pasta, stuff them with cornbread and bacon, or simply enjoy them as an appetizer on toasted bread, sprinkled with a dash of salt and coarsely ground black pepper.
