Entertaining is easier than ever with this carefree menu of cool and refreshing salads. If you're short on time, steamed shrimp and rotisserie chicken from the supermarket make quick starts for our main-dish salads. Both can be prepared the day before the party.

Make It Special
Bake your favorite cornbread mix in shell-shaped madeleine pans. Lightly grease pans, and fill each mold two-thirds full. Bake at 425° for 6 to 8 minutes or until cornbread is golden brown.
Serve scoops of Honey-Chicken Salad in individual pastry shells. Use refrigerated piecrusts to make your own, or take a super-shortcut, and simply bake a package of frozen tart shells.
Pour a pretty pitcher of fruit-flavored iced tea. Place decorative mint sprigs and brightly colored berries in ice cube trays, and freeze with fruit juice, ginger ale, or lemonade. Add to chilled tea just before serving.
