Serve Tex-Mex Rice With Corn alongside Beefy Taco Salad, an edible bowl layered with warm and cool fillings.

High-Flavor Lowfat Mexican Recipes:
1. Smashed Pinto Beans
2. Tex-Mex Rice With Corn
3. Beefy Taco Salad
4. Pork Tacos With Pineapple Salsa

If you're like me, you crave dishes from your favorite Mexican restaurant at least once a week. Those baskets of crispy chips with queso dip and cheese-laden entrées taste heavenly, but they're usually very high in fat and calories.

Here's a solution--savor the flavors you love, but make them healthier by using plenty of appetizing fresh ingredients. Sampling this spread will have you saying que rico (yummy)!

"Mexican for Supper" is from the May 2003 issue of Southern Living.
