Healthy Chicken Recipe: Almond Chicken
Several of this month's recipes get more than 40% of their calories from
fat--but please don't panic, folks. Most of that fat comes from nuts, which contain no cholesterol. Nuts are low in saturated fat and high in
monounsaturated and polyunsaturated fats. This combination can reduce risk of
heart disease by lowering LDL (bad) cholesterol and raising HDL (good)
cholesterol. A 1% reduction in LDL results in a 2% to 3% decrease in risk of heart disease. Nuts and seeds are also excellent sources of protein, fiber, and vitamin E.
Many nutrition experts agree that we should limit our fat intake to 30% of total
daily calories (not necessarily individual servings). So give yourself
permission to try these nutrient-packed recipes.
