Creating different delicious and nutritious chicken dishes can be a challenge, so we decided to take on the task. We started by using some select Southern Living recipes as a blueprint. We then reduced total fat, saturated fat, and calories by using lighter versions of dairy products and decreased the amounts of butter and oil. No one will ever guess that these richly flavorful entrées are a healthy option.

What's a portion of chicken?
For an average 3-pound chicken, a breast half weighs about 7 to 7 1/2 ounces. That leaves about 5 to 6 ounces of trimmed chicken, which makes one portion. Most boneless-skinless chicken breasts are packaged as split breast or breast halves. For more chicken information visit www.tyson.com.
