Egg substitutes have been on the market for years, and unfortunately they’ve been mostly misunderstood. The skinny: Egg substitutes are eggs without the cholesterol and fat. Here are a few tips to help you enjoy this low-calorie option.

• Cook them on a lower heat than eggs, and cook them more slowly. You’ll end up with a better texture.
• When scrambling, add a spoonful of light cream cheese to enhance the flavor.
• Use them in dishes just like regular eggs; they make especially great omelets.
• You can freeze the carton for up to a year, so save a few bucks by buying in bulk.
