Good-For-You Grilling
Get ready to cook outdoors with these wholesome recipes and simple techniques.

Strawberry Napoleons

Lemon-Grilled Salmon with asparagus and store-bought whole wheat couscous.

Grilling is one of the easiest--and most flavorful--ways to cook. Just a light marinade or seasoning will do, and the grill takes care of the rest. Test Kitchens Specialist Vanessa McNeil Rocchio developed these light recipes that you can serve at any outdoor gathering.

Healthy Recipes:
  • Strawberry Napoleons
  • Grilled Pepper Bread
  • Pork Kabobs
  • Lemon-Grilled Salmon

  • Healthy Benefits

  • Omega-3 fatty acids in salmon help prevent blood clots that can cause heart attacks.
  • Red fruits such as strawberries, cherries, pomegranates, raspberries, and watermelon help improve memory function, lower the risk of certain cancers, and help maintain urinary tract health.
  • Refreshing Beverage
Treat your guests to iced herb tea. It makes a great accompaniment to a meal straight from the grill. For a fun garnish, serve the tea with rock candy stirrers. (We found them at a local candy store.)

A Simple Way to Grill Fish
Grilling fish on cedar planks is so easy. Not only does the wood add smoky flavor to your dish, but the planks also prevent the fish from flaking and falling through the food grate. Soak the planks in water at least 8 hours beforehand to prevent burning. Keep a spray bottle of water handy for any flare-ups. Look for the planks in the grilling section of your grocery store, home-improvement center, or specialty kitchen or garden shop.
