Recipe: Make-Ahead Mashed Potatoes

Prepare them a few days in advance of your holiday party, family potluck, or festive celebration, and simply pop the smooth, cream cheese-infused mashed potatoes in the oven on the day of your event. No hassle; no worries. In the midst of hosting several guests and cooking dinner entrées, you won’t have to concern yourself with peeling or mashing the potatoes. They’ll be ready to place in the oven when it’s most convenient. Handy and oh-so-tasty, these Make-Ahead Mashed Potatoes are made with butter, cream cheese, sour cream, and, of course, baking potatoes. You won’t be able to resist a second – maybe even a third – serving.

To begin, simply peel the potatoes, and cut them into 1-inch cubes. Next, cook your diced potatoes in a medium saucepan in boiling water for about 20 minutes. Be sure to drain them, and place the potatoes in a large mixing bowl. Then, beat the cream cheese and your next four ingredients at medium speed with an electric mixer until they are perfectly smooth and fluffy. Lastly, spoon the mixture into a lightly greased baking dish. There you have it! It’s as easy as that.
