Farmed, fresh, or frozen, catfish is one of our favorite fish.
Then, of course, there's always fried catfish—and that's a classic. Red pepper, garlic, and cornbread coat these fillets for a perfect, moist, and crisp delight. The key to creating incredible catfish is simply using stone-ground yellow cornmeal if you can get it. We love it served with a few lemon slices, and a big dollop of tartar sauce. Keep your oil hot, get that golden crust, and you'll be serving up seconds. And, if you want to step out of the box, make a batch of Caribbean Catfish with Mango-Black Bean Salsa, or some Catfish Beignets with Zesty Tartar Sauce. Catfish will have your tongue all right.
