This melty, ooey, gooey panini is chockfull of Thanksgiving flavor. We love the addition of creamy, melted mozzarella. Pepper jelly spread over hearty white bread gives the perfect kick. This meal comes together quick and, after the biggest cooking holiday of the year, we have a feeling you'll be ready to get out of the kitchen. Feel free to customize this sandwich to make it your own and let guests do the same. If you're really ready to sit back and relax, let family and holiday guests make their own paninis. Just set out all the ingredients and let them go at it.

Ingredients

  • 1/2 cup pepper jelly, divided
  • 8 hearty white bread slices
  • 8 ounces roast turkey, sliced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cups loosely packed arugula
  • 8 (1-oz.) mozzarella cheese slices
  • 2 tablespoons melted butter

How to Make

  1. Spread 1 tablespoon pepper jelly on each of 4 bread slices. Top each with 2 ounces turkey, and sprinkle evenly with salt and pepper. Divide arugula evenly among sandwiches, and top each with 2 mozzarella slices. Spread remaining 1/4 cup pepper jelly evenly on remaining 4 bread slices, and place, jelly side down, on each sandwich.
  2. Brush a preheated panini press with melted butter, and cook sandwiches until golden, 2 to 3 minutes. Serve immediately.
