This Tex-Mex soup packs a punch of flavor in each bowlful. The next time you’re looking for the perfect chicken noodle soup, try this instead. It’s full of Tex-Mex flavor that we know you’ll love. Start the meal off with chips, salsa, and our Easy Guacamole. If you’re looking to get even more festive, add a bath of tasty margaritas to the menu. Just before serving, stir in cilantro, and lime juice for a dose of extra fresh flavor. We love topping each serving of soup with thinly sliced radishes for a little crunch. If you don't have roasted turkey on hand, feel free to sub in a store-bought rotisserie chicken instead. Soups make great freezer meals. This recipe serves eight so, rather than letting it go to waste or halving the recipe, make up a full batch and freeze in zip-top plastic freezer bags whatever your family does not eat. Pull out of the freezer and reheat on low before serving. 

How to Make It

Heat olive oil in a Dutch oven over medium-high. Add onion, celery, garlic, oregano, cumin, and chili powder; cook, stirring constantly, 5 minutes. Add tomatillos; cook, stirring constantly, 1 minute. Add Turkey Stock, hominy, and green chiles; bring to a boil. Stir in roast turkey; reduce heat to low, and simmer until heated through, about 20 minutes. Remove from heat, and stir in cilantro, lime juice, salt, and pepper. Serve immediately with toppings.
