Penne is one of our favorite Italian short pastas here at Southern Living, and we love to find incredible and delicious ways to use it in the kitchen.
It works equally well fresh out of a pot of salted, boiling water, or as part of an oven-baked delight. One of the best easy pasta dinners to get penne on the plate is Chicken-and-Artichoke Penne. The best part of this dish is bringing everything together in a single skillet and topping it with cheese before piling servings high on a plate. If you'd prefer your penne a little on the lighter side, try Spring Pea Pasta with Ricotta and Herbs, or penne with a truly Southern twist: Lemony Green Bean Pasta Salad. And although cavatappi is our favorite noodle for mac-and-cheese, penne works equally as well in a dish like Mexican Mac and Cheese—so don't skip the treat because you think you don't have the pasta. However you dish up this classic durum wheat treat, just be sure not to give this short pasta short shrift.
