Recipe: Grilled Maple-Chipotle Pork Chops

Summer is the perfect time to fire up the grill, gather friends in the backyard, and sit down to a fresh al fresco dinner. Grilled pork chops are a great way to put your grilling to the test this summer – they're inexpensive to purchase, easy to grill, and only take a few minutes to pull together. These Maple-Chipotle Pork Chops are a quick and delicious way to spend your evening. The recipe takes just 10 minutes of prep time, and is easy to complement with fresh or grilled veggies, roasted potatoes, or even our cheesy Smoked Gouda Grits. The marinade combines barbecue sauce, maple syrup, adobo sauce, and finely minced chipotle peppers. Use half of the sauce toward the end of your grilling to lock moisture into your pork chops, and then serve any remaining sauce with the meat once you've taken the chops off the flames.

To start the recipe, whisk together the peppers, sauces, and syrup until your marinade is fully combined. Sprinkle six bone-in pork chops – about 1 1/4-inch thick – with salt and pepper evenly. That's all the prep! Throw your chops onto the grill over medium-high heat, or about 350˚ to 400˚. Cook for around 20 minutes, flipping once, until a meat thermometer reads 155˚ in the thickest portion of the pork chop. In the last five minutes (or, around 145˚), baste the meat with half of your sauce mixture. Pull the pork chops off of the grill, and serve them with your favorite side dishes. Drizzle with the extra sauce, or serve the Maple-Chipotle Sauce on the side for guests to serve themselves.
