Rice is always welcome on my table, especially when it’s paired with chicken. These ingredients are such perfect partners that nearly every family has a favorite recipe for this down-home dish. Its plain, sturdy comfort makes it appealing to children, especially basic versions, such as Simple Chicken and Rice. Adults may prefer the Tex-Mex flair of Salsa Verde Chicken Casserole or Baked Chicken and Rice With Black Beans. All are mildly seasoned, so if you like a little more spice, stir in some chopped pickled jalapeños or serve with hot sauce on the side. With or without the heat, these are great choices to warm up a winter night.
