Sunday Supper: Pineapple Upside-Down Cake

Whether it’s a succulent pot roast, cheesy casserole, or warming, savory stew, we love Sunday supper. It’s a dinner party without the formality, where family and friends gather for easy conversation and good food – lots of it!

This week, we’re highlighting a classic comfort dessert, pineapple upside-down cake, that’s as retro-chic as the congealed salad. That’s right—amidst the recent buzz over Southern Living’s clever video, “Bring Back the Jiggle,” we think it’s time for the pineapple upside-down cake to shine.

Variants of this cake have existed in Europe since Medieval times, but American settlers created the inverted, glazed fruit-topped butter cake that we know today. Without access to an oven, Americans “baked” leavened foods such as cornbread, biscuits, and cakes in a cast iron skillet over fire. Upside-down cakes containing chopped apples and cherries evolved from these cast-iron creations and were popular in the early 20th century. In 1925, Dole held a recipe contest to promote their new canned pineapple product. After receiving thousands of recipes for upside-down cake with pineapples, Dole knew they had found a new American comfort classic. The winning recipe made the 1926 cookbook, Hawaiian Pineapple As 100 Good Cooks Serve It and starred in many of Dole's advertisements.

Today, many chefs are embracing the pineapple upside-down cake, dressing it up with flavors such as cardamom, ginger, and bourbon. From maraschino cherry-topped to carrot cake-inspired, we’ve chosen our best pineapple upside-down cake recipes for you and your family to enjoy. So put that cast-iron skillet to good use and save us a piece!
