With omelets you have an easy meal in your hip pocket. You can even customize the filling. Substitute leftover rotisserie chicken or roast beef and almost any cheese―Cheddar, Swiss, or mozzarella―you have on hand. Try another herb for parsley. Add a side or bread, and dinner is ready.
