[MUSIC] At Southern Living, we think supper should be quick, easy and delicious. Here's what's for supper. Hi, I'm Vanessa with the Southern Living test kitchens. If you're a busy mom like me, you're always looking for easy recipes that are great for weeknight suppers. One of my favorites is cheesy barbecue sloppy joes. This recipe is a fun new take on an all American favorite because it uses barbecue sauce and gets a kick from jalapenos. Start by browning lean ground beef in a non-stick skillet. I like to use the large skillet because there's more cooking surface, so the meat browns more quickly. Once the meat is browned, I drained off the fat. You shouldn't have too much, since it is lean ground beef. Next, stir in ketchup, and barbecue sauce, Worcestershire and diced tomatoes. One of the reasons I love this recipe is that you have most of the ingredients already in the pantry. If your family likes it spicy, go ahead and add some chopped pickled jalapenos along with the juice. And then cover and cook for 10 minutes. While the sloppy joes cook, I'll prepare my Texas toast. Serving this dish on Texas toast makes it just right for eating with a knife and fork. Oh, this smells so good. Now just spoon the beef mixture over the top of the Texas toast. Sprinkle with cheddar cheese. And serve with a side salad. Now, all you have to say is, y'all come to supper.
