Homemade soup soothes both body and soul. But it's hard to make just a little if you're cooking for one or two people, and you're tired of eating it long before it's all gone. Three soup-loving friends and I found the perfect solution. We each make a large pot of our favorite recipe and gather at one house to sip and share. The tastings and swaps take on a leisurely party atmosphere as our laughter serenades the gathering.
You can enjoy the fun too. Share any of these tasty recipes with some friends, and accompany them with hot corn muffins, whole grain breads, or assorted crackers. Before everyone leaves, fill freezer containers with leftovers, and label each soup. You'll go home with clean pots and a bounty of comfort food. Store tightly sealed containers in the freezer up to one month so you can savor a different soup each week. Repeat the swap as often as you want to replenish your supply.
