I love rotisserie chicken but is there anything else I can do with it besides just eating it plain? A rotisserie chicken is a great time saver. You can use it any time a recipe calls for chopped, cooked chicken. One of my favorite recipes to use it in is King Ranch Casserole. It's cheesy, loaded with flavor, and is done in less than an hour. What's even better is leftovers heat up like a dream. To start, all we're going to need to do is take some non-stick cooking spray and spray a large skillet. Now I've got some chopped bell peppers and onions. And if you want to save time, and even a little bit of money, look for bell peppers and chopped onions, already chopped up, in the freezer section. Saute this over medium heat until it's nice and tender. This is a really simple casserole because we just dump, stir and then assemble it. Gonna be a breeze. To start with, we have our diced tomatoes with green chilies. So I'm gonna pour that in here. And then we're gonna add some cream of mushroom soup. Now a lot of people balk at using cream soups in a recipe, but this is actually a lighter version, because I'm using fat-free cream soups. So we're gonna have a nice, light King Ranch casserole for a change. Still gonna be loaded with flavor. And this is our cream of chicken, a little bit of chili powder, black pepper, and some garlic powder. And then I'm gonna stir in my chicken, which I've already shredded. A good thing to keep in mind is that each rotisserie chicken generally yields about three to three and a half cups of chicken, so remember this when you're using it in your recipes. I've got my mixture all stirred up into the skillet, so I'm ready to assemble my casserole. I sprayed a 9x13 baking dish with nonstick cooking spray. And I've got some corn tortillas that I've torn into about one-inch pieces. I'm gonna put a third of those in the bottom of my dish. Okay. Now, we're gonna top this with about a third of our mixture here. So we're kinda making a Texas lasagna. And then I'm gonna sprinkle a third of my shredded cheese on top of it. We don't have to be real precise. This is just supper here. So we're gonna repeat this two more times. I've got my casserole all layered, and I'm just gonna add the top layer of cheese, one of my favorite parts. Okay, and now we've got this all cheesy and ready to go. I'm just gonna pop this in a 350 degree oven for about 30 minutes. And now we have our finished light King Ranch Chicken Casserole. I hope you get to try this recipe soon.
