Quick-Fix Oven Chicken Risotto

[BLANK_AUDIO] Hi I'm Vanessa with the Southern Living test kitchens, and oven Chicken Risotto is what's for supper. Now when you hear risotto you might think that this recipe is a ton of work. But this one is backed in the oven and only uses eight ingredients so it's perfect for you busy Moms. Start by adding butter to a baking dish and melting it in the oven. Melting the butter this way ensures that we keep this a one dish recipe. Now I'll stir in chicken broth Chopped onion, salt, and arborio rice. A arborio rice is a short grain rice used to make risotto creamy. If you don't have arborio, you can substitute any long grain rice. Jasmine is my favorite. It is so fragrant and delicious. I'll cover and bake for about 35 minutes. When it's done, remove the rice from the oven and fluff with the fork to separate the grain. Then stir in fresh mozzarella, half the grate tomatoes and one of my favorite convenience product, daily roasted chicken. And finally, top with shredded basil. You can shred the basil ahead of time. Just place a damp paper towel on top to keep it from turning brown. This looks so good. Your family will never know how easy it is to prepare. Finish it off with steamed green beans and a hot roll.
