Similar to an omelet or quiche, frittatas mix eggs with savory veggies, meats, and cheeses. This recipe starts with sautéing
veggies and finishes in the oven in the same skillet. Try substituting your favorite ingredients in place of tomatoes and
herbs. We like tomato and sausage, bacon and mushroom, and eggplant and olive. Slice in wedges and serve with a side salad.
